Pick Me Up Parfaits

I’ve been craving Tiramisu for a couple of months now and finally decided to give in to my craving!

Not having all the ‘right’ ingredients for ‘real’ Tiramisu didn’t stop me, either. I improvised and this is what I came up with:

Pick Me Up Parfaits :)

I baked one boxed yellow cake mix according to directions, After it was done baking I let it cool while I whipped some heavy cream with some sugar, set it aside and beat some cream cheese with some powdered sugar then folded in the whipped cream.I also poured a cup of coffee and let it sit to cool.

After the cake was room temperature I cut it onto chunks and put a small layer into the bottom of a glass then poured some coffee over it. I then took the cream cheese mixture and put a layer of that over it. I continued this until I reached the top of the glass, gave it a dusting of cocoa powder, and then topped it off with some chocolate curls! Put it in the fridge to chill and then I made Brandon taste it before I decided to share it with you guys. And he gave it two thumbs up.

 

This is what you’ll need if you want to make your own:

 

  • 1 boxed yellow cake mix baked according to directions
  • 1 small container heavy cream whipped with 2 TBSP sugar
  • 1 8oz package cream cheese whipped with 2 TBSP powdered sugar
  • 1 to 2 cups coffee, cooled
  • chocolate candy bar and cocoa powder if desired

That’s it, its super easy, tastes like Tiramisu, which by the way means ‘Pick Me Up” in Italian.

I also use the same cream cheese/whipped cream mixture in another dessert…I’ll share that one later ;)
